Finger Lickin' Good Friday: Awesome Grilled Chicken BLT Sandwich

With Baby sleeping in the Crib...
 I quietly tip toe my way into the Kitchen for some lunch! To be honest, today it feels like this is my Guilty Pleasure--you  know, sneaking away by myself into the kitchen for some carefully crafted deliciousness?
 
My Escape
 I feel like it is my escape from the "Running-around the house Mom" I have now become.  Instead of whipping up a bunch of food together in a bowl, giving it a shake or two, and throwing it down the hatch (eating it) and calling that episode there LUNCH, I find it really nice to actually take thought into putting together this lunch for me today!  



So in the Fridge I found these Ingredients:
  • Avocado, 
  • Head of Ice Berg lettuce, 
  • Tomato, 
  • Uncooked chicken (I had boneless tenders that I cut from chx. breasts)
  • White bread
  • Turkey Bacon 
  • a Jar of Pesto 
  • Mayo.  

So, what does this sound like?
An Awesome Grilled Chicken BLT Sandwich!

 Instructions:

  • Cook the Chicken:  Drizzle the Chicken with olive oil, salt, pepper, or any of your favorite seasonings. Pan Fry.  Set aside. 
  • Next, Cook the Turkey Bacon till Crisp! 
  • Slice the Avocado, Tomato, and Lettuce
  • Pesto and Mayo: Mix about a spoonful of each into a small bowl.  Spread this onto your slices of bread and arrange the Avocado Tomato, and Lettuce onto bread.
  • Arrange Cooked Chicken and Crispy bacon on top
  • Heat Panini Press if you have one OR do what I did, I drizzled outside pieces of bread with Olive oil (lightly) and put it on my pan for a short time.  It browned up really nicely and heated the pesto-mayo up!
  • ENJOY!

I know it's simple, but believe me...I ate it ALL within two minutes after taking a picture! 
It just melted in my mouth!




Turkey Bacon?!?


Now, I know I love bacon, but the other day we ran into Turkey Bacon that was marked down to $1.99!  Who could pass up this opportunity when regular bacon prices are a bit steep on the budget?

Well, after cooked up and trying it out for myself.... 
I loved it!
I know that I could taste the difference if I thought REALLY hard about it.  But for the most part, nope!  It tasted like bacon.  As far as turkey bacon being more healthy?   I am not too sure if anything with the word "Bacon" will ever be "healthy".  The process of making bacon bacon, or turkey bacon still includes the nitrite stage.  So....here's more information on it if you'd like! :)

Here are some pictures of our bathroom.  I wish that there was a "Refresh, Sweep & Clean" button I could press so that things look more like a Bathroom Spa-Getaway instead of the Room you "RUN AWAY FROM"! 



1.)  Our faucet is just not working out for us.  
 The spout is just so low and the sink just doesn't allow for little hands to easily get at the flow of water.  I literally have my daughter's belly pressed against the sink and her hands outstretched to its limits before being able to get at the water.  If the neck were longer then things would be able to work so much better.     Also, cleaning in between the faucet parts are just plain difficult.  The space between counter and the faucet parts are so close together and so low that I have to get a towel and "floss" it through just to get it clean from the sitting water and mildew buildup in there. 



2.  The walls are bare and impractical. 
The space (on the right) is a wall that could use something!  We could really use a cabinet or something to ground our walls to practical reality.  With the bare walls, the space really creates a cold hospital-office feel.  I could really use a cabinet or shelving to create a comfortable, practical, and interesting bathroom.  Or even some wall decor! :)

3.  Shower curtains need a makeover. 
Would love to Refresh our bathroom with a bold look.  I know that I fresh bold shower curtain can really change our bathroom into a room that is comfortable and pleasing to be in. With new shower curtains having nice colors I think it would put a nice warmth to the bathroom.

4.  Kitchen Rug serving as a Bathroom rug
Our brave Kitchen Rug bravely volunteered to be our temporarily rug in the bathroom.  Now serving his 3rd year as the Kitchen-Bath Rug, he is not happy at the more permanent spot in the bath.  He would rather be in the kitchen keeping my feet warm from the cold laminate!

"Retire me please..."
  To be serious, I really want something that makes me feel good when I step out of the shower.  I want something soft luxurious and well--nice to look at when I get out of the shower.  I want to feel like I just stepped from the shower into some place dry and warm and not my kitchen rug.

Jenn Bostic- "Jealous of the Angels"


Have you ever lost someone in your family or a close friend? 
I know that I have been fortunate to not lose a family member yet, but I do have grandparents who are reaching the ends of their lives.  I have however have lost close friends that are forever in my memory.   I know that up above they watch me and root me on to live my life well and to be faithful to the One who has always been there for me.  I know that there is a great cloud of witnesses up above somewhere watching our lives play out before them.

I was contacted to share this song "Jealous of the Angels" by Jenn Bostic.  This is her song, and reason for writing her song.  I hope you enjoy!







"Jealous of the Angels," was written for my dad.  He passed away in a tragic car accident when I was ten years old.  Music and songwriting became the only forms of therapy that truly allowed me to express my emotions.  I have written multiple songs on this subject, but it wasn't until fourteen years after his death that we (cowriters Zach Runquist and Jimmy Fortune) created something that represented everything I felt.  I remember saying that night that my one wish was to know that he was smiling down on me and that he was proud of me.  That night I prayed.  I prayed every night for two months that God would give me some sort of sign that my dad was smiling down on me.  I didn't tell anyone what I was praying for, but I was believing God for a selfish answer.  On Christmas Eve that year, my best friend in the world, who has been with me through everything, called me from Oregon at 7:15 in the morning to tell me about a dream she had had the night before.  She said my dad was in her dream and said, "Please tell Jenn I'm so proud of her and that I'm at every one of her shows."




 I share this story whenever I perform "Jealous of the Angels."  It is a huge part of my testimony.  As I began sharing it inspired others to tell me there stories.  Soon I was receiving emails and facebook messages from strangers telling me their intimate stories about loss and how much my song had spoken to them.  When we had written this song I thought this was a blessing for me to have some sort of closure with any uncertainty I might have had, but I started to realize and continued to everyday, that God is using this song to touch the hearts of those who have lost loved ones, to comfort them and to help them heal.  I feel so blessed to be a part of it.  The stories kept coming, I cannot count on two hands the amount of people who have come up to me in tears after a show telling them how much "Jealous of the Angels" touched them and exactly who it makes them think of.  The stories have not only been an affirmation that God is at work through the song, but they are healing and comforting to me as well.  This is what inspired my team and I to develop a weekly blog featuring one of these stories each week.  The stories and comments continue to blow me away.  I thank God everyday for the gifts He has given me, and am now trying to live up to responsibility I have with them.”

Book Review: Safely Home by Randy Alcorn



Summary of Safely Home:

 Randy Alcorn's heart for this book was to write a fiction book that is a melting pot of many very non-fictional events and realities that have happened to those in countries where real Christians are really persecuted.

While telling the story of Li Quan whose legacy seems to be martyrdom, Randy was able to intertwine in the book the sole thought of God's Sovereignty.  He is in control of every circumstance.  And He works every circumstance for good to the glory of God--even through great sorrow and loss.  In this book you can catch a glimpse of how He is at work in the characters of Ben Felding and Li Quan.

Every circumstance and detail seem to be purposed by God even the hard ones we can't explain.  I feel that this book can be the story of everyone in some shape or form.  I felt myself encouraged, ashamed, repentant, forgiven, and joyful.  Many times I found myself thinking the exact thoughts that one person was thinking--I feel that this book is an encouragement to every believer and non believer too.  --An encouragement that life is more than this world.  There is hope and joy and life in Christ Jesus that is more filling than anything this world can offer.  This book is also about knowing that the sufferings of this present world is but for a moment in light of eternity. 

Lessons Learned:
People face persecutions because of their faith in Jesus and their desire to read the Bible everyday. 
Often times I find myself just cold, uncaring, and desensitized when I hear about brothers and sisters in some third world country being persecuted for their faith.

Have you ever felt that way?

How often does one get overwhelmed or even feel so detached from news like this?  For me, it is quite often.  I feel sorry and pity for them in one second, and forget about them in the next!  I hate that I am shallow in this sense.  But this book, Safely Home  awakened me from my cold emotions.  I was not overwhelmed nor burdened by the weight of knowing all the horrible things people are going through.  Instead, I felt love and compassion come back again, and that cold uncaring feeling melted away.

I believe God showed me that my part in all this was to be a prayer warrior for these brothers and sisters.  He never asked me to conquer the world or anything...but what  I could DO is to pray. Instead of feeling detached or pity or sorrow for them because I feel incapable and  can do nothing, I feel like I am taking out the enemy with the biggest guns ever---PRAYER! 

JOY and HOPE and LOVE for those who I could not see seemed to take bloom. 
Not joy because others are suffering, but the hope and joy that I know will come in the morning for them.  I pray that they remain faithful until the end and be strengthened with His might.  I pray that they know that "Real Gold Fears No Fire".  Also, joy that I can get to see those who I have never seen before in heaven. 

Conclusion:

  • In short, I love this book and I heartily recommend you pick it up to read--I already have a friend who is going to get my copy of the book to read! 
  • I give this book a 5 out of 5!

Book Review: My First Words at HOME


I think this would be a great board book for my little girl!  The colorful vivid pictures that are identifiable and common enough for her to recognize provide my one year old enough to keep her attention for a while as I read.  I think it is fun, and is a book that will help her when she is old enough to be learning how to read.

 The words are something that I can easily point out and with a big picture near the word I am saying, I am sure this book can help little one learn their first words of Home.  It's a nice first "words" book for toddlers and though I wish the words were a bit bigger to catch my daughter's attention a lot more, I think it's still a good book to have.

Book Review: My Face Book

Book Review: My Face Book
Babies love looking at other babies and these charming baby faces, smiling, frowning, and laughing are sure to captivate and delight toddlers and babies. I am really starting to love looking through Starbright Books!  Here is yet another one of their board books that are fun for little ones!  How often does my little girl love looking at other babies?  All the time!  She is often enraptured by looking at their faces and looking back at me.  I think it is fun to see her interact with other children.

My Face Book by Starbright Books is another one that I would recommend to toddlers.  For one thing, babies love looking at faces!  This book is different than most of the baby books we have on our book shelf.  My Face Book has great pictures of faces of real kids having real emotions.  It is colorful and includes words to describe the faces the kids make.  Who would not want to look at these cuties?

Hoarders on TLC

We all have problems:
Sometimes I get so caught on watching this show.  I also kind of feel a bit of sympathy for them.  Though I am not a hoarder, I know how hard it is sometimes getting rid of things I just don't need!  Talk about Paper Clutter, Containers, toys, clothes....There are times that I hold on to things for years because I keep thinking "What IF I need it later?  What if I lose weight? What if?!?!?"  I can only imagine what a person who actually hoards EVERYTHING and ANYTHING would feel like.  I know it's hard for me to let go of some things, but what about the person who just can't let go?  I feel for them, and just hope that the root of the problem can be fixed and helped. I so badly hope that the light can shine out into the darkness to show them that how they are living is dangerous to their health and livelihood.  Not to mention those who love them. 

Praying for Deliverance:
I feel for them!  But at the same time I do hope that those working with them can rescue them from the stronghold of hanging on to material things.  God knows that I need to be delivered from wanting and wanting!!  Though I do not have a house chalk full of stuff I know that a little of a "hoarder" can be inside all of us.  I do pray for those who I see on the show....I am always amazed at how much stuff they have and the health hazards it causes them---and I pray that they can realize that life is so much better, safer, and much better when we can break off the ties of the Material world.  So pray pray pray that they can get the victory over the compulsion to collect and keep things.  I know it hurts those in their families and draws people and friends away from them. 

Depression:
I just finished an episode of Hoarders called "I Was Gonna Gag".  My heart went out to the father.  I know CPS has the best interest for the kids, and I just felt myself rooting for the father to get rid of everything and get life back together so that his kids could come home. 
Note:  I am glad that CPS came to get the children while he got his life and house together.  Children no matter how much a father or mother loves him or her needs to be in a safe and non-hazardous place.
I could tell he loved his kids.  He somehow just let life and problems and stuff bury him under.  He mentioned a couple of times that he was just depressed--which I felt that I could totally relate to.  I know that when I get depressed I can hardly do the dishes, cook, and keep up with the daily chores!  I know that depression is something I continually have to rise above from.  I fight depression daily.  It only takes one thought to ride the downward spiral of depression.

Bryton Pick Review


The Bryton Pick: Floss in Seconds Experience:
This was something that my husband and I tried out to review over a couple of days.  Now looking at the thing, I could not really help but be afraid of what it looked like--a sliver of sheet metal.  But following the directions and making sure I slid the pick away from my mouth, it was not altogether a bad experience.  It was not however inconspicuous as the package says it would be.

I do not recommend this product for those who have teeth that are relatively closely set.  I had a hard time getting the metal to go between my teeth!  Sadly, our experience with the Bryton Pick was not too much enjoyable.  I constantly thought that I was going to slit my gums through.  It was also difficult for me to get the Bryton Pick to work around my teeth as a floss does. Getting past the front teeth was a task that did not work out at all for me and my husband. 

I do not have braces so I have no idea how it would work with braces. 
 
Some Positive Points:
Ultimately, It is nice to have around to use just as I would a toothpick.  It's easy to clean, and is small and flexible enough to store in my bag.  It worked to get out big chunks after eating ribs, pop corn or something of that sort. 

Conclusion:
Just as a toothpick did not replace my floss, this Bryton pick will not replace my floss.  It was difficult for our family to use, and as I have tightly spaced teeth I would not recommend this too often unless someone was looking for something more of a reusable toothpick.

My friend's fiancee come over to print off a resume on my printer.  We had trouble getting the printer to work.  Figures that he was stressed to begin with and very impatient... I understand we all get that way.  So I did my best to troubleshoot the printer's issues.  I refilled the ink cartridge and such and tried to get him to be a bit more assured that things will work out.  

He said, "If there really is a God then have him get this thing working to print out my resume!" 

I was taken back, and knew from prior experience with him that he was an atheist.  Fully knowing he was testing out my boundaries as a Christian, I fumbled not knowing what to say.  God is more than this I wanted to say!  I had wished my mind was filled with the Word of God and clear to hear and speak out what God wanted me to say.

 15But sanctify the Lord God in your hearts: and be ready always to give an answer to every man that asketh you a reason of the hope that is in you with meekness and fear: (1 Peter 3:15)



I held myself back, because of fearing that what I say would just be weak.  I regret this my dear sisters and brothers!  If simple and truthful are my words...God's Word does not fall down empty!  It will accomplish what it is set to accomplish!  I need to keep sowing otherwise I will reap nothing.  

I want another Chance God to defend your name, and your character!  I do not want to be cocky, but I sure want to be settled in the fact of, His Name, Jesus Christ is the name that everyone's knees shall be bowed to.  Every tongue shall confess that Jesus Christ is Lord!  To the glory of the Father.


Needless to say his resume did not print out.  He left in a hurry and a bit irritated that his day did not go the way he wanted.  I was left with wanting to invite him and his family back over to where if the Lord willed, maybe I can get a word in or something!!!!  Or perhaps maybe just be a light to him.  Whatever God wills let me just be a vessel for His use. 


In the End...
Indeed God does exist regardless of his resume printing out or not.  Who is this unbeliever and Who are we in the midst of a Him?  God is greater more powerful than we can ever imagine.  We are nothing.


God, let us not be timid or ashamed of you or your Word.  Let us speak when and what you desire for us to speak.  Let us be faithful to keep your Word in our hearts too!

A Sweet Summer Escape with Jaritos Soda--- Jarritos Review

Now I am not a soda drinker, but I have to admit, on hot days there is nothing like a cool refreshing drink!  On days where there is pizza and all kinds of junk foods...I love me the carbonated drinks! 

Being a nice hot summer this year and at time for pizza dinners and some movie nights--It was a TREAT to review some Jarritos sodas to go along with our family times!
 





Even though my roommate from way back when boasted of
her Jarritos soda, I had not tried it.  We ended up making
a mixture of Tex-mex food instead of running out to get the soda!
So when we got the chance to try out some Jarritos...you better believe
I jumped at the chance!!! 

One thing that I remember though that my roommate said, was that Jarritos
was made from 100% Natural Sugar Cane instead of the corn syrup
regular soda was made of.  She said that in Texas she would
drink this alot, and I have to admit I can taste a difference between
this soda and others! The taste of Jarritos is something different than
regular canned pop.  It has a real unique taste that is light and not too
thick, heavy and sugar laden.   I love it.  The carbonation in the soda is very smooth.
It does not kick me in the butt to where I can't really enjoy the taste and flavor.  I also
found that when I could not finish a bottle, when kept in the fridge
I found that the Jarritos soda stayed fresh and nicely carbonated.

Not to mention it is a soda in a glass!  Maybe that kept the carbonation going?
I don't know but our family had so much fun drinking soda in a glass
--Something about a chilled glass soda bottle made
our meal or movie just a bit more special! 


I found that my favorite flavors was Mango and Guava and believe
it or not--PINEAPPLE! 

So here is the scoop about the flavors:

Fruit Punch (tutifruti)- It is very yummy!  Though not my favorite flavor.
I made the mistake of drinking it before refrigeration.  I opened it after the
mail man disappeared from view.  I should have been more patient.  It tasted
a bit like medicine.  BUT after refrigeration, a big difference.  I have to say,
please refrigerate this one otherwise it will taste a bit too sweet and too much
like cough medicine. 

Grapefruit (toronja)--My sis in law tried this one and it is her favorite. She is
a big soda drinker and she liked this one!  I took a sip and you know, I thought it was
very very unique and such a AWESOME flavor!!!
 
Guava (guayaba)--This is a very surprising flavor that I have to say you MUST try. 
Now I don't think it tasted like an actual guava I've tried, but it was lovely and fruity.
 
Hibiscus (jamaica)--Now this is a nice light flavor.  It is not my favorite but
because the flavor is just too light for me!
 
Mandarin (mandarina)--I love orange soda! This is what it reminded my husband of. 
 
Pineapple (piña)--Can you imagine sipping on a pineapple?  I loved this flavor.
I was so surprised that pineapple can make a great tasting soda pop!
 
Strawberry (fresa)--This reminded me of yes, strawberries.  It was good! Who would have known strawberry carbonation could taste well nice?

Tamarind (tamarindo)--This is something my family cooks with, it is a bit sour/sweet.
I think it was an alright flavor, not my favorite, but worth the try if you like sour/sweet.
But it is a complex flavor that if you hadn't had it growing up you might not like it. 
 
Lemon-Lime ("lima-limón")--My Sister's favorite!  SHe said it tasted like 7up!
I tasted it and I think it's refreshing and does remind me of Sierra Mist and 7up.
 
Mango (mango)--One of my favorites!  I like that I can "drink" up a mango soda and feel
like a kid again!  When I was little we used to eat a lot of mangoes!!!
 
Cola (cola)--this is one of the most safest flavors, and indeed it tastes like cola. 
I think it is more light tasting than other colas which is a nice difference. I am not a soda
drinker so I kind of like this flavor of Cola because it is light tasting.
